1.Before You Start.Your cooker should give you many years oftrouble-free cooking if installed and operatedcorrectly. It is important that you read thissection before you start. WARNING: The appliance and itsaccessible parts become hot during useand will retain heat even after you havestopped cooking. Care should be taken toavoid touching heating elements. Childrenless than 8 years of age shall be kept awayunless continuously supervised. CAUTION: A long term cooking processhas to be supervised from time to time.A short term cooking process has to besupervised continuously. At the risk of fire DO NOT store items onthe cooking surfaces. To avoid overheating, DO NOT install thecooker behind a decorative door. WARNING: Accessible parts will becomePersonal SafetyThis appliance is for cooking purposes only.It must not be used for other purposes, forexample heating a room. Using it for anyother purpose could invalidate any warrantyor liability claim. Besides invalidating claimsthis wastes fuel and may overheat the controlknobs.This appliance is for use in Great Britain andthe Republic of Ireland. It is a Cat II2H3 cookerand is set for G20 at 20 mbar. (A conversion kitfor LPG is available for the cooker). The electrical installation must be installedin accordance with all relevant BritishStandards/Codes of Practice, BS 7671.Or with the relevant national and localregulations and with the local gas andelectricity supply companies’ requirements.Before operating the ovens please referto the oven shelf installation, in theAccessories section.1

Connect the mains cable to thecorrect terminals for your electrical supply type(Fig. 1.1 and Fig. 1.2). Check that the links arecorrectly fitted and that the terminal screws aretight. This appliance can be converted for use onanother gas. Before installation, make sure that thecooker is suitable for your gas type andsupply voltage. See the data badge. DO NOT use reconditioned orunauthorised gas controls. Disconnect from the electricity and gassupply before servicing. When servicing or replacing gas-carryingcomponents disconnect from thegas supply before starting operation.Check the appliance is gas sound aftercompletion.

Make sure that the gas supply is turnedon and that the cooker is wired in andswitched on. In your own interest and that of safety, it islaw that all gas appliances be installed by aqualified person(s). An appliance for use on LPG must not beinstalled in a room or internal space belowground level, e.g. in a basement.Before using for the first time, make sure thatall packing materials have been removed andthen, to dispel manufacturing odours, turn theovens to 200 C and run for at least an hour.Before using the grill for the first time youshould also turn on the grill and run for 30minutes with the grill pan in position, pushedfully back and the grill door open.Make sure the room is well ventilated to theoutside air (see ‘Ventilation’ below). People withrespiratory or allergy problems should vacatethe area for this brief period.This cooker must be installed in accordancewith: British Standards/Codes of Practice, BS5440 Part 2 Natural Gas: BS 6172 and BS 6891 LP Gas: BS 5482-1 (when the installation isin a permanent dwelling) Gas Safety (Installation and Use)regulations Relevant Building/IET regulationsCooling FanThis appliance may have a cooling fan. Whenthe grill or ovens are in operation the fan willrun to cool the fascia and control knobs.VentilationThe use of a cooking appliance results in theproduction of heat and moisture in the roomin which it is installed. Therefore, make surethat the kitchen is well ventilated: keep naturalventilation holes open or install a poweredcookerhood that vents outside. If you haveseveral hotplates/burners on, or use the cookerfor a long time, open a window or turn on anextractor fanIf You Smell Gas DO NOT turn electric switches on or off DO NOT smoke DO NOT use naked flames Turn off the gas at the meter or cylinder Open doors and windows to get rid of thegas Keep people away from the area affected Call your gas supplier If you are using Natural Gas in the UK,ring the National Grid on: 0800 111 999Maintenance It is recommended that this appliance isserviced annually. WARNING: Before replacing the bulb,turn off the power supply and make surethat the oven is cool.Peculiar Smells DO NOT use cooking vessels on thehotplate that overlap the edges. Unless specified otherwise in this guide,always allow the cooker to cool and thenswitch it off at the mains before cleaning orcarrying out any maintenance work. DO NOT use the control knobs tomanoeuvre the cooker.When you first use your cooker it may give offan odour. This should stop after use.3

NEVER operate the cooker with wet hands. DO NOT use a towel or other bulky clothin place of a glove – it might catch fire ifbrought into contact with a hot surface. DO NOT use hotplate protectors, foil orhotplate covers of any description. Thesemay affect the safe use of your hotplateburners and are potentially hazardous tohealth. especially a deep fat fryer. Wait until thefat is cool. Filling the pan too full of fat cancause spill over when food is added. If youuse a combination of oils or fats in frying,stir them together before heating, or as thefats melt.NEVER heat unopened food containers.Pressure build up may make the containersburst and cause injury. DO NOT use unstable saucepans. Alwaysmake sure that you position the handlesaway from the edge of the hotplate. NEVER leave the hotplate unattendedat high heat settings. Pans boiling overcan cause smoking, and greasy spills maycatch on fire. Use a deep fat thermometerwhenever possible to prevent fatoverheating beyond the smoking point.WARNING: Unattended cooking on annhob with fat or oil can be dangerous and DO NOT use the top of the flue (the slotalong the back of the cooker) for warmingplates, dishes, drying tea towels orsoftening butter. DO NOT use water on grease fires andnever pick up a flaming pan. Turn thecontrols off and then smother a flamingpan on a surface unit by covering the pancompletely with a well fitting lid or bakingtray. If available, use a multi-purpose drychemical or foam-type fire extinguisher. DO NOT modify this appliance. Thisappliance is not intended to be operatedby means of external timer or separatedremote-control system. If flammable materials are stored in thedrawer, oven(s) or grill(s) it may explodeand result in fire or property damage.Oven Caremay result in fire. NEVER try to extinguish a fire with water,but switch off the appliance and then coverthe flame e.g. with a lid or a fire blanket. NEVER leave a chip pan unattended.Always heat fat slowly, and watch as itheats. Deep fry pans should be only onethird full of fat.WARNING: Danger of fire: do not storeitems on the cooking surfaces. Foods for frying should be as dry as possible.Frost on frozen foods or moisture on freshfoods can cause hot fat to bubble up andover the sides of the pan. Carefully watch forspills or overheating of foods when frying athigh or medium high temperatures.WARNING: Use only hob guards designedby the manufacturer of the cookingappliance or indicated by the manufacturerof the appliance in the instructions for useas suitable or hob guards incorporated inthe appliance. The use of inappropriateguards can cause accidents. NEVER try to move a pan of hot fat,4 When the oven is not in use and beforeattempting to clean the cooker always becertain that the control knobs are in theOFF position. Use oven gloves to protect your hand frompotential burns. Cooking high moisture content foods cancreate a ‘steam burst’ when the oven dooris opened (Fig. 1.3). When opening theoven, stand well back and allow any steamto disperse.

The inside door face is constructed withtoughened safety glass. Take care NOTto scratch the surface when cleaning theglass panel. Accidental damage may cause the doorglass panel to fracture. Keep oven vent ducts unobstructed. DO NOT use harsh abrasive cleaners orsharp metal scrapers to clean the oven doorglass since they can scratch the surface,which may result in shattering of the glass. Make sure the shelves are pushed firmlyto the back of the oven. DO NOT close thedoor against the oven shelves. DO NOT use aluminium foil to covershelves, linings or the oven roof. When the oven is on, DO NOT leave theoven door open for longer than necessary,otherwise the control knobs may becomevery hot. DO NOT use the timed oven if theadjoining oven is already warm. DO NOT place warm food in the oven to betimed. DO NOT use a timed oven that is alreadywarm. Use dry oven gloves when applicable –using damp gloves might result in steamburns when you touch a hot surface.Fig. 1.3ArtNo.324-0001 Steam burstFig. 1.4FrontbracketFRONTOven ShelvesTo fit the glide-out shelf, hook the front of theshelf onto the runners as shown (Fig. 1.4). Therear of the shelf should rest on the runners, infront of the rear stop (Fig. 1.4).Standard oven shelves can be fitted by liningup the shelf with a groove in the oven ladders.Push the shelf back until the ends hit the shelfstop. Lift the front so the shelf clears the stops,then lower the front so the shelf is level andpush it fully back.5Rear stop

Grill/Glide-out Grill Care When using the grill, make sure that thegrill pan is in position and pushed fully in,otherwise the control knobs may becomevery hot.DO NOT leave the grill on for more thana few moments without the grill panunderneath it, otherwise the knobs maybecome hot. NEVER close the grill door when the grill ison. Accessible parts may be hot when the grillis in use. Young children should be keptawayCooker CareAs steam can condense to water dropletson the cool outer trim of the oven, it may benecessary during cooking to wipe away anymoisture with a soft cloth. This will also help toprevent soiling and discolouration of the ovenexterior by cooking vapours.Cleaning Isolate the electricity supply beforecarrying out any thorough cleaning. Allowthe cooker to cool. In the interests of hygiene and safety, thecooker should be kept clean at all times asa build up in fats and other food stuff couldresult in a fire. Clean only the parts listed in this guide. Clean with caution. If a wet sponge orcloth is used to wipe spills on a hot surface,be careful to avoid steam burns. Somecleaners can produce noxious fumes ifapplied to a hot surface. NEVER use paint solvents, washing soda,caustic cleaners, biological powders,bleach, chlorine based bleach cleaners,coarse abrasives or salt.6 DO NOT mix different cleaning products– they may react together with hazardousresults. All parts of the cooker can be cleaned withhot soapy water. Take care that no water seeps into theappliance. Before you remove any of the grill parts forcleaning, make sure that they are cool oruse oven gloves. DO NOT use any abrasive substances onthe grill and grill parts. DO NOT put the side runners in adishwasher. DO NOT put the burner heads in adishwasher. NEVER use caustic or abrasive cleaners asthese will damage the surface. DO NOT use steel wool, oven cleaningpads or any other materials that willscratch the surface. NEVER store flammable materials in thedrawer. This includes paper, plastic andcloth items, such as cookbooks, plasticware and towels, as well as flammableliquids. DO NOT store explosives, such as aerosolcans, on or near the appliance. DO NOT use steel wool, oven cleaningpads, or any other materials that willscratch the surface. DO NOT attempt to disassemble or cleanaround any burner while another burneris on, otherwise an electric shock couldresult.

2.Cooker OverviewFig. 2.1AProfessionalBdeluxeCEDThe 90 dual fuel cooker (Fig. 2.1) has the following features:A.5 hotplate burners including a wok burnerB.Control panelC.Glide-out grillD.Main multi-function ovenE.Tall fan ovenFig. 2.2Hotplate BurnersThe drawing by each of the central knobs indicates whichburner that knob controls.Each burner has a Flame Supervision Device (FSD) thatprevents the flow of gas if the flame goes out.When a hotplate control knob is pressed in, sparks will bemade at every burner – this is normal. Do not attempt todisassemble or clean around any burner while another burneris on, otherwise an electric shock could result.To light a burner, push in and turn the associated controlknob to the high position as indicated by the large flamesymbol ( ), (Fig. 2.2).The igniter should spark and light the gas. Keep holding theknob pressed in to let the gas through to the burner for aboutten seconds.7

Using a lid willhelp the contents boil more quickly (Fig. 2.4).Fig. 2.4Large pans should be spaced well apart.Pans and kettles with concave bases or down-turned baserims should not be used (Fig. 2.5).Simmering aids, such as asbestos or mesh mats, areNOT recommended (Fig. 2.6).
