Breville recommends safety firstAt Breville we are very safety conscious. We design and manufacture consumer products withthe safety of you, our valued customer, foremost in mind. In addition we ask that you exercisea degree of care when using any electrical appliance and adhere to the following precautions.Important safeguardsRead all instructionsBEFORE USE AND SAVE FORFUTURE REFERENCE Always ensure the food processor orblender is completely assembled beforeoperating. The appliance will not operateunless properly assembled. Carefully read all instructions beforeoperating the Breville food processorand blender for the first time and savefor future reference. Remove and safely discard any packagingmaterial and promotional labels beforeusing the food processor or blender forthe first time.Ensure the speed selection dial is in theOFF position and the food processor orblender is switched off at the power outletand the power cord is unplugged beforeattaching the processing blade, discs orprocessing lid. Switch off the appliance and disconnectfrom supply before changing accessoriesor approaching parts that move in use. Always secure the processing bowl ontothe motor base before attaching theprocessing blade or discs. To eliminate a choking hazard for youngchildren, remove and safely discard theprotective cover fitted to the power plugof this appliance. Do not place the food processor orblender near the edge of a bench or tableduring operation. Ensure the surface islevel, clean and free of water and othersubstances. Always operate the food processor orblender with the lid in position. Do not push food into the processingchute with your fingers or other utensils.Always use the food pusher provided. Do not use the food processor or blenderon a sink drain board. Do not place the food processor or blenderon or near a hot gas or electric burner, orwhere it could touch a heated oven.Keep fingers, hands, knives andother utensils away from movingblades and discs. Never place your fingers, hands orutensils inside the processor bowl orblender jug without unplugging theappliance from the power outlet. Do not place hands or fingers into theprocessing bowl of the food processoror blender jug unless the motor, blenderblade and discs have come to a completestop. Ensure the speed selection dial isin the OFF position and the appliance isswitched off at the power outlet and thepower cord is unplugged before removingthe lid from the food processor bowl andblender jug. Handle the food processor, blender jug andattachments with care – remember the bladesand discs are razor-sharp and should be keptout of the reach of children. Be careful when emptying the processorbowl and blender jug and duringcleaning. Mishandling of the blades maycause injury. Use the blade protector when storing theprocessing blade.4

Breville recommends safety first Ensure the motor and blade or discs havecompletely stopped before disassembling.Ensure the speed selection dial is inthe OFF position and the appliance isswitched off at the power outlet andthe power cord is unplugged from thepower outlet before attempting to movethe appliance, when not in use, if leftunattended and before disassembling,cleaning or storing. Do not use attachments other thanthose provided with the food processoror blender. Do not attempt to operate the foodprocessor or blender by any method otherthan those described in this booklet. Care should be taken when removingthe food from the processing bowl byensuring the motor and the processingblade or disc, have completely stoppedbefore disassembling. Ensure the speedselection dial is turned to the OFFposition, the appliance is switched offat the power outlet and unplugged,before removing the lid from the bowl.The processing bowl should then beunlocked from the motor body and theprocessing blade or disc holder carefullyremoved before attempting to remove theprocessed food. If food becomes lodged around theblending blade, turn the speed selectiondial to the OFF position, then switchthe appliance off at the power outlet andunplug the cord. Make sure the motor andblades have completely stopped beforeremoving the jug from the motor base.Use a spatula to dislodge or stir the foodbefore continuing. Do not use fingers asthe blades are sharp.Some stiff mixtures, such as dough, maycause the dough blade to rotate moreslowly than normal. In this unlikely eventof an excessive load, do not operate theappliance continuously with excessive loadfor more than 1 minute. Do not operate the food processorcontinuously for periods longer than3 minutes on any setting or if processinga heavy load. Do not operate the blendercontinuously for periods longer than1 minute on any setting. None of therecipes in this book should requireprocessing for longer than 3 minutesor blending longer than 1 minute andnone are considered a heavy load. If thefood processor or blender is operatedcontinuously for too long, it should beallowed to rest for 25–30 minutes beforerecommencing. Do not process hot or boiling liquids –allow liquids to cool before placing intothe processing bowl or blending jug. Do not move the food processor orblender whilst in operation. Do not leave the food processor or blenderunattended when in use. Do not place any part of the foodprocessor and blender in the dishwasheror microwave oven. Do not process thin fluids such as water,milk, stock, juice, etc. above the 500mllevel in the processing bowl as this couldresult in overflow. To reduce the riskof overflow, always add drier or thickeringredients to the processing bowl priorto adding fluids. Do not place anything on top of the foodprocessor or blender when the lid is on,when in use and when stored. Keep the food processor and blenderclean. Follow the cleaning instructionsprovided in this book. Do not remove the blender jug from themotor base while in operation. Do not use the blender for anything otherthan food and/or beverage preparation. Do not operate the blender without foodor liquid in the blender jug. Do not subject the blender jug to extremesof hot or cold, for example, placing a coldjug in hot water or vice versa.55

Breville recommends safety firstIMPORTANT SAFEGUARDS FORALL ELECTRICAL APPLIANCES Any maintenance other than cleaningshould be performed at an authorisedBreville Service Centre. Fully unwind the power cord before use. Do not let the power cord hang overthe edge of a bench or table, touch hotsurfaces or become knotted. To protect against electric shock do notimmerse the power cord, power plug ormotor base in water or any other liquid.This appliance is for household use only.Do not use this appliance for anythingother than its intended use. Do not usein moving vehicles or boats. Do not useoutdoors. Misuse may cause injury. The appliance is not intended for use bypersons (including children) with reducedphysical, sensory or mental capabilities,or lack of experience and knowledge,unless they have been given supervisionor instruction concerning use of theappliance by a person responsible fortheir safety.The installation of a residual currentdevice safety switch is recommendedto provide additional safety protectionwhen using electrical appliances. It isadvisable that a safety switch with a ratedresidual operating current not exceeding30mA be installed in the electricalcircuit supplying the appliance. See yourelectrician for professional advice. Children should be supervised to ensurethat they do not play with the appliance. It is recommended to regularly inspectthe appliance. BEFORE FIRST USEPREPARING THE FOOD PROCESSORAND BLENDER FOR USERemove and safely discard all packagingmaterials and promotional labels. Washthe food processor bowl, blender jug, lidand other attachments in warm soapywater using a mild detergent. Rinse anddry thoroughly. (Refer to Care & Cleaningsection of this booklet.)3. Insert the spindle into the foodprocessor bowl by placing it over theshaft in the centre of the bowl androtating until it falls into place.NOTEThe blending blades and foodprocessor blades are extremelysharp. Avoid any contact withfingers and hands.ATTACHING THE FOODPROCESSOR BOWLThe food processor bowl and lid must becorrectly assembled for the food processorto operate.1. Place the motor base on a flat, dry surfacesuch as a bench top. Make sure that themotor base is turned off at the poweroutlet and the power cord is unplugged.ASSEMBLING the stainless steelPROCESSING BLADE1. Carefully remove the protective storagecover from the processing blade.2. Carefully place the processing bladeover the centre of the spindle.2. Place the processing bowl (with thelid off) over the drive shaft and ontothe motor base with the handle facingforward. Turn the processing bowlcounter-clockwise to lock into position.3. Release the processing blade so that itdrops to the bottom of the spindle andfalls into place.4. Place the food to be processed into theprocessing bowl as indicated in the recipe.11

BEFORE FIRST USEASSEMBLING the stainlesssteel slicing/ shredding/CHIPPING discsASSEMBLING the DOUGH BLADE1. Place the dough blade over the centre ofthe spindle.1. Carefully select the desired disc to beused (slicing, shredding or chipping).2. Slide the blade (sharp side facing up)into the side grooves of disc holder.Continue to push the disc into placeuntil it covers the 2 small black tabs inthe centre of the disc holder.2. Release the dough blade so that it dropsto the bottom of the spindle and fallsinto place.3. Place the food to be processed into theprocessing bowl as indicated in the recipe.3. Hold the disc by sliding your thumb andindex fingers into the holes of the discholder. Place the assembled disc holderonto the spindle and release so that it fallsinto place.ASSEMBLING the WHISK1. Place the whisk over the centre ofthe spindle.WARNINGThe processing blade and the discsare extremely sharp. Use caution whenhandling and storing these parts.2. Release the whisk so that it drops to thebottom of the spindle and falls into place.3. Place the food to be processed into theprocessing bowl as indicated in the recipe.12

BEFORE FIRST USEAttaching the lidAttach the lid by placing it on theprocessing bowl ensuring thesymbolon the lid is aligned with thesymbol onALIGNthe bowl.To lock the lid in place, hold the feed chuteand turn the lid counter clockwise so thesymbol on the lid aligns with thesymbolLOCKon the handle.Ensure the lid is positioned securely. Insertthe food pusher and measuring cup intoposition in the food chute.NOTEASSEMBLING AND ATTACHINGTHE BLENDER1. Place the motor base on a flat, drysurface such as a bench top. Ensurethat the motor base is switched off atthe power outlet and the power cord isunplugged.2. Place the blender jug over the drive shaftand onto the motor base with the handlefacing forward.3. Turn the blender jug counter-clockwiseto lock into position.Ensure the spindle, blade, disc anddisc holder are clean and free of foodresidue before attaching the lid.NOTEThe food processor will not operateunless the processing bowl and lidare positioned correctly and lockedinto position.4. Add food or liquid into the blender jugensuring not to exceed the MAX mark.5. Place the blender lid firmly into positionon the top of the blender jug.13

BEFORE FIRST USE7. Plug the power cord into a 230/240Vpower outlet and switch on.8. Ensure the motor base is in theOFF position.NOTE6. Insert the clear inner cup into theblender and turn until securedinto position.Do not fill the blender jug above theMAX line. When the blender jug isfilled at or near the MAX line placeone hand on the blender lidto avoiddisplacement of the lidduring operation.9. Select the required speed (HIGH orLOW) by rotating the speed dial. Theblender will start to operate.NOTEOperate the blender only for theappropriate amount of time required –do not over blend.NOTEWhen adding oil or other liquidsduring operation, remove the innermeasuring cup and pour ingredientsthrough this hole. Do not removeblender lid during operation.10. PULSE function – For ingredientsthat require short bursts of power, likecrushing ice. Turn the dial to counterclockwise to the PULSE position. Turnand hold for the length of time that aburst of power is needed. Do not overblend. The maximum amount of icecubes the blender can blend at any onetime is 1 standard ice tray or 250g.NOTENOTEThe Breville blender features aBreville Assist Lid. This allows thelid to fit tightly onto the blenderjug, avoiding displacement duringoperation. The ring pull design allowsthe user to easily remove the lid with asimple leverage action.14Use the PULSE function when the foodthat is being processed is too thickor coarse to circulate within theblender jug.

BEFORE FIRST USE11. At the end of use, always ensure theblender is turned to the OFF position.Then switch the appliance off at thepower outlet and unplug the cord.Ensure the motor and blades havecompletely stopped before attempting tomove the appliance, or when the blenderis not in use and before disassembling,cleaning and storing.NOTEDuring the blending process,ingredients may stick to the side ofthe blender jug. To push the food backonto the blades, turn the blender tothe OFF position, switch off at thepower outlet and remove the powercord. Remove the lid and use a plasticspatula to scrape down the sidesof the jug. Replace the lid beforerecommencing blending.NOTEIf any moisture or liquid appears ontop of the motor base during blending,turn the blender to the off position,switch off at the power outlet andremove the power plug. Remove theblender jug. Wipe the motor baseimmediately with a dry cloth or papertowel to absorb the liquid.Disassembling your foodprocessor and blender forcleaning, care and storage1. Always ensure the food processor orblender is off by turning the dial to theOFF position. Then switch off at thepower outlet and unplug the power cord.2. Rotate the food processor bowl/blenderjug clockwise until it lifts off themotor base.WARNINGBe careful when handling the foodprocessing and blending blades asthey are sharp. Mishandling of theblades may cause injury.WARNINGNever place anything other than foodand liquids in the food processor andblender whilst the motor is running.Overload protection systemThe motor is protected from burning out byan automatic cut-out switch. If the applianceis overloaded or operated continuously fortoo long, the motor may overheat and stop.To operate the appliance again, you mustswitch off, unplug and allow to cool forapproximately 30 minutes. Once the motorhas fully cooled, it is ready for use again.Some stiff mixtures, such as dough, maycause the dough blade to rotate more slowlythan normal. In this unlikely event of anexcessive load, do not operate the appliancecontinuously with excessive load for morethan 1 minute.If this occurs again, the processing bowlmay be overloaded, so remove some of thefood and process in smaller batches.NOTEThe food processor is designed sothe motor will not operate withoutthe processing bowl and lid correctlylocked into position. In the event thatthe food processor starts without thelid correctly locked into position,immediately disconnect at the poweroutlet and return to your local BrevilleService Centre for examination.15

Or, turn anticlockwiseand hold for PULSE.Processing BladeWhen using the processing blade in thefood processor, the food should be placedinto the processing bowl before locking thelid into position.However, some recipes call for liquids, etc.to be added during processing. To do this,remove the measuring cup from the foodpusher and slowly pour the liquid throughthe narrow opening.NOTETo avoid over-processing, check theconsistency frequently when the foodbeing processed requires a coarse orthick texture.NOTECare should be taken when removingthe food from the processing bowl byensuring the motor and the processingblade or disc, have completely stoppedbefore disassembling.As a safety feature, the food processorwill automatically switch off when thelid is unlocked, however it is a goodpractice to turn the speed selectiondial to the off position and switch offat the power outlet before removingthe lid.WARNINGWhen slicing and shredding, alwaysuse the food pusher to guide food downthe food chute. Never put your fingersor spatula into the food chute. Alwayswait for the disc to stop spinningbefore removing the lid.The processing blade and the discsare extremely sharp. Use caution whenhandling and storing these parts.NOTEIf necessary, turn the speed selectiondial to the OFF position, switch offat the power outlet, unlock the lidand use the spatula to scrape downthe sides of the bowl to ensure evenprocessing.Slicing, Shredding and Chipping DiscWhen using the slicing, shredding orchipping discs, the food is placed into thefood chute and pushed down onto therotating disc using the food pusher. Tosupport narrow food items, when processing,position the food pusher into the food chute,insert the food into the narrower opening anduse the measuring cup as the food pusher.Dough Blade & WhiskWhen using the dough blade and whisk,the ingredients to be processed shouldbe placed into the processing bowl beforelocking the lid into position.See the 'Basic Food Processing TechniquesChart' in this booklet for more informationon using the dough blade and whisk.17

BASIC FOODPROCESSING TECHNIQUESwith your Breville product

BASIC FOOD PROCESSING TECHNIQUESChopping with the Processing bladeRAW VEGETABLES, FRUITS,COOKED MEATSCut ingredients into approximately 2.5cm cubes. Use PULSE forroughly chopped texture. Use HIGH for finely chopped texture.It may be necessary to scrape the sides of bowl using a spatula toensure more even chopping.Raw MeatTrim meat off any bone, fat or gristle and cut into approximately2.5cm cubes. Process on HIGH until chopped/minced to desiredconsistency. It may be necessary to scrape the sides of bowl using aspatula to ensure more even chopping.Garlic, Chilli, GingerFor garlic, peel cloves and leave whole. For chilli, leave whole(remove seeds for milder chilli). For ginger, peel and cut into 2.5cmcubes. Process on HIGH until chopped to desired consistency.Store chopped garlic or chilli mixed with a little oil in an airtightcontainer in refrigerator for up to 1 week.HerbsWash herbs and dry well. Remove stalks/stems if necessary. Use PULSEto chop to desired consistency. It may be necessary to scrape the sidesof bowl using a spatula to ensure more even chopping.NutsEnsure shells of nuts are removed. For crushed nuts use PULSEuntil chopped to desired consistency. For fine nut meal process onHIGH until a fine and even texture is achieved. It may be necessaryto scrape the edges of bowl using the spatula to ensure more evenchopping. Do not over process or nuts will become oily.Soft Bread CrumbsRemove crusts from slices of stale bread and tear into quarters. Processon HIGH until fine bread crumbs are formed. For coarse breadcrumbsuse the PULSE function. Dried breadcrumbs are not recommended.Cake CrumbsCut cake into approximately 2.5cm cubes. Process as for softbreadcrumbs (above).Biscuit CrumbsBreak biscuits into bowl. Process on HIGH until fine crumb texture.If making a crust for cheesecake or slice, add melted butter throughfood chute while motor is running.19

BASIC FOOD PROCESSING TECHNIQUESPUREEING with the Processing bladeCOOKEDSOUPS,SAUCESPlace cooked soft soup/sauce mixture into food processor bowl.Process on HIGH until smooth. If making a creamed soup, addmilk or cream though food chute while motor is running. Donot exceed 2L liquid level. Do not over blend after cream hasbeen added.Min 500mlMax 1500mlCOOKEDCook vegetables until soft and place into food processor bowl.VEGETABLES, Process on HIGH until smooth. Small amount of stock of waterFRUITSmay be added for a smoother texture.Min 200gMax 600gCOOKEDMEAT, PATETrim and cut cooked meat into 2.5cm cubes. Process on HIGHuntil pureed to desired consistency. Add small amount of panjuices if puree becomes stiff. For chicken liver paté, leave liverswhole and process till smooth, adding cream through food chutewhile motor is running. It may be necessary to scape the sides ofthe food processor bowl using the spatula to ensure more evenprocessing.Min 200gMax 600gBABY FOODProcess soft cooked meat and/or vegetables on HIGH untilsmooth, adding a small amount of liquid or gravy if necessary. Ifrequired, freeze excess mixture in ice-cube trays, then repack infreezer bags ready for use.Min 200gMax 600gSOFT FRESHFRUITIdeal for berries, stone fruit, kiwi fruit, or mango purees. Ifnecessary peel and cut fruit into 2.5cm cubes. Ensure any pips orstones are removed. Process on HIGH until smooth.Min 200gMax 600gDIPS,SPREADSPlace ingredients into the food processor bowl and process onHIGH until smooth. If some ingredients are to remain chunky,add these ingredients after initial processing and use PULSE untildesired consistency is achieved.Min 200gMax 600gSlicing, shredding, grating and chipping with the processing discsFruit and vegetablesFor small fruit and vegetables (e.g. kiwi fruit, Roma tomatoes), trim one end so the food sitsflat in the food chute. For large fruit and vegetables (e.g. apples), cut in half or quarter to fitfood chute. Pack into the food chute with cut side facing disc.20

If food fits into thefood chute without needing to cut it, trim one end sothat it sits flat in food chute. Pack food vertically intothe food chute with cut side facing disc.Shredding DiscSlicing DiscChipping DiscCutterLEAFY VEGETABLESCabbage, lettuceFor cabbage, wash and shake off excess water. Cutinto wedges to fit food chute. For lettuce, separateleaves, wash and dry thoroughly, then roll up and packvertically into food chute.Shredding DiscSlicing DiscNOTE: Slicing or shredding is not recommended forspinach (silver beet or English). To process spinach,wash and dry thoroughly, tear into pieces and usechopping blade.MozzarellaPartially freeze for 20 minutes until firm otherwise itwill jam in the disc. Cut cheese to fit the food chute.Slice one end and pack into the food chute so the flatend is facing the disc.Shredding DiscSEMI-HARD CHEESEChedder, Tasty,ColbyCut cheese to fit the food chute.Shredding DiscHARD CHEESE,Parmesan, ROMANO,PECORINOFor hard cheese check first that it is not too hardotherwise it will damage the blades - the cheeseshould slice easily with a sharp knife. Cut cheese to fitthe food chute.Shredding DiscWhisking with the whisk attaChmentEgg whitesEnsure the processing bowl, whisk and spindle are completelyclean, dry and free from any fat residue. Add 4 egg whites to thefood processor bowl. Process on LOW for 1 minute or until eggsare foamy. Add 1 tablespoon lemon juice to help stabilise the eggwhite foam.TIP: The egg white foam is not reccomended to make meringueor pavlova.CreamPour 600ml cream into the food processor bowl, blend on HIGHfor 15-20 seconds until firm. Do not over process.Milk shakesAdd milk, flavourings, syrup and softened ice cream to the foodprocessor bowl. Not exceeding 2L liquid level.21

BLENDING AND FOODPROCESSING TIPSfor your Breville product

BLENDER AND Food Processing TipsBLENDER TIPS Use LOW for light mixing and stirringsuch as dressings, marinades andbatters and foods that require mixinguntil just combined. Use HIGH for blending, liquefy andpuree ingredients. Use PULSE for foods that only requireshort bursts of power such as crushing iceor chopping nuts. Ensure all foods are cut into cubes(approximately 2-3cm squares) whereappropriate to achieve an even result. Blend thick mixtures when theblender is ¼ to ½ full as they will pureemore efficiently. Place liquid ingredients (when usingseveral ingredients) in the blender jugbefore solid ingredients, unless specifiedin the recipe. Stop the blender and scrape down thesides of the blender jug with a plasticor rubber spatula, once or twice whileblending thick or dry mixtures. Do not blend a heavy mixture for morethan 10 seconds. For normal blendingtasks, for example, dressings etc, do notoperate for longer than 1 minute at onetime without turning off the blender andstirring the ingredients. Allow applianceto cool down before continuing blending. Do not operate the blender withouthaving the blender lid in position. Toadd additional ingredients duringblending, remove the inner cup and placeingredients through the opening in thelid. When adding oil or other liquidsduring operation, slowly pour through thehole in the lid. Do not fill the blender jug above the MAXline. When the blender jug is filled at ornear the MAX line, place one hand on theblender lid to avoid displacement of thelid during operation. Do not place anyobjects, other than food or liquid, into theblender while the motor is running. Do not use the blender to store food. The blender will not knead dough ormash potatoes.
