Cook Number Grill Unpacking&InitialPrepcleaningCarefully unpack your COOK NUMBER GRILL and remove all corrugated shipping elementsused to protect your grill in transit. Before youbegin, we first recommend removing the GrillingGrate on the left side and the Searing Plate onthe right side and washing them both with warmsoapy water.SeasoningyourFireStonelegacy20 i/e GrillGetting Started1. Please familiarize yourself with the safetyguidelines at the front of this manual.2. Be sure the grill is plugged in and stationedon a clean and dry surface.3. Open the grill lid.4. For first time START-UP procedure, werecommend following the steps below toprepare your grill for optimum performanceby staging a proper initial “seasoning / burnoff” process.Step 1.BEFORE IGNITION, take a soft clean cloth andapply a thin coating of cooking oil or olive oil tothe cloth and lightly wipe on both the grate andthe searing plate of the grill.Step 2.You’ll be seasoning both surfaces of the grill oneside at a time following the ignition instructionsbelow. Be sure to allow time for each side tofully heat up and release any initial smokeduring this break-in / seasoning stage.Fire Stone COOKNUMBER GRILL STARTINGINSTRUCTIONS:The Fire Stone COOK NUMBER GRILLS aredesigned to operate either on the left side / grillmode - or the right side / sear mode BUT NEVERBOTH SIDES AT THE SAME TIME.4Getting StartedMODELS JAG20e & LG20ieTo start the LEFT Grilling & Roasting side:1. First, turn on the grill by depressing theblack OFF / ON rocker switch on the frontpanel to the right – for the ON position.2. Turn the – far right dial COUNTER-CLOCKWISEto start the GRILL SIDE heating element.The Fire Stone COOK NUMBER GRILL isdesigned to automatically operate at HIGHTEMPERATURE in this mode.3. Allow 5 to 7 minutes for the GRILL SIDEsurface to reach its full temperature tocomplete the initial seasoning process or tobegin grilling.To start the RIGHT Searing Plate side:1. Turn on the grill by depressing the black OFF/ON rocker switch on the front panel to theright – for the ON position.2. Turn the – far right dial CLOCKWISE to startthe Searing Plate heating element andturn the temperature to the highest setting@ 550 for the initial seasoning / burn-offprocess. Allow 5 to 7 minutes for the SEARINGPLATE surface to reach its full temperature tocomplete the break-in / seasoning process orto begin searing.Now that your Fire Stone COOK NUMBER GRILL is seasoned, you will use the searing feature byselecting the desired temperature of your choiceusing this far right knob. Searing times may varybased on what you’re grilling.Then, after searing is done, continues by turningthe left GRILL SIDE on by rotating the same farright knob Counter-clockwise and finishthe grilling process using your convection grillfeature to achieve the desired professionalcooking results.* Searing plate can also be used to sautevegetables or other items. Place items on searplate and adjust temperature knob accordingly.MODEL CNE20This model has a 3-way switch to turn on thesearing plate (right side). Flip the swich to theright. Allow 5-7 minutes for the searing plateto reach 500F. When this temp. is reached, thepower will automatically transfer to the left side& back again to the right side, keeping the rightsear plate between 450-500F. To turn on the leftgrill side, flip the switch to the left.

Store products indoors when not in use, out ofthe reach of children; andn The proper ventilation - preferably directlyunderneath an indoor cooking ventilationhood or near a well-stabilized stone surfacesuch as a fireplace hearth.4. Do not clean this product with a water sprayor the like. (This statement may be omitted ifthe results of a special water hose spray test areacceptable).n Never operate in the presence of flammablesurfaces or in standing or running water.n While grilling, flare-ups from fats and juicedrippings can occur, so be sure to monitorfood closely so it does not burn.GroundingInstructionsThis appliance shall be grounded while in useto protect the operator from electrical shock.The appliance is equipped with a 3-conductorcord and a 3-prong grounding-type plug to fitthe proper grounding-type receptacle. Plug intoa GFCI-protected outdoor receptacle, whereavailable.Extension CordsUse only 3-wire extension cords that have3-prong grounding-type plugs and 3-polecord connectors that accept the plug from theappliance. Follow the steps for Getting Started outlined onpage 4.MODELS JAG20e & LG20ie2. To begin SEARING or GRILLING - push the FireStone Legacy OFF/ON rocker switch to theright for the ON position. Next, rotate the farright searing & grilling control dial clockwisefor searing.or counterclockwise for grilling,roasting or convection baking.MODEL CNE20 - See page 4How to use the FIRE STONECook Number Control System:1. First, follow the start-up instructions underthe Getting Started section shown at the topof page 4. Pre-heat the grill for 5 to 7 minutesin the mode of your choice – either the LEFTGrilling & Roasting side, or the RIGHT SearingPlate side. After the grill mode you’ve selectedis up to temperature, place the food on thepre-heated surface and insert the Cook ControlSystem Monitor Probe into the food forworry-free controlled cooking.For best results, be sure to insert the probe intothe deepest part of your fillet or roast.2. Set the audible temperature “controlledcooking” monitor feature by dialing in yourCook Number to correlate with thefood you are grilling or roasting.3. When the probe detects the food has reachedits proper temperature, the red lights willilluminate and the alarm will sound.6Temperature Setting/Alert DialOFF/ON Rocker SwitchRemember – thick cuts of meat such as steaks orroasts will continue to cook after they have beenremoved from the grilling surface.4. Be sure to turn the far right control dial OFF bypushing the black OFF / ON rocker switch to theleft OFF position, and unplug your grill aftereach use.SearingTIP: You may want to lightly coat the searingplate with oil or non-stick cooking spray priorto use.1. Follow the steps for Getting Started outlined onpage 4.2. For a professional seared finish,place meat or fillet on preheated SEARING PLATE locatedon the right side of the grill.3. Sear meat or filletapproximately 30-45 secondson each side for rare, 45-60seconds on each side formedium, 60-90 seconds on each side for welldone, and slightly longer for cuts thicker thanone inch or in cold weather.4. Once meat or fillet is seared on both sides,rotate far right dial counterclockwise toignite grilling surface and continueconvection grilling.* On model CNE20, simply flip the switch to theleft for sear mode.5. When searing plate has reached a temperatureof about 500F, the heat will transferautomatically to the left gril side. When itcools down to 450 F, it will transfer back tothe right side.

HOW TO use yourGrilling and Roasting Cook number Grill continued1. Follow steps for Getting Started outlined onpage 4.7. When the probe detects the food has reachedits proper temperature, the alarm will soundand the red lights will iilluminate.2. For professional grilling and convectionroasting, place meat or fillet on pre-heatedstainless steel grate. You may want to lightlycoat the steel grate with oil or non-stickcooking spray prior to use.9. Turn the far right control dial OFF by pushingthe black OFF / ON rocker switch to the left OFFposition, and unplug your grill after each use.3. For turkey, whole chicken, or roast, followrecipe instructions for preparation, basting,etc. as you normally would for indoorrange cooking. A V-shaped roasting rack isrecommended. Make sure to use a shallowroasting pan to catch drippings.4. Remove the COOK CONTROLSYSTEM Monitor Probe fromholder and insert probe intothick part of meat but NOTtouching the bone (see photo).For steaks, fillets and roasts,insert probe tip as near thecenter of the meat as possible.6. Close the hood and let convection cookingdo the rest. Keeping the hood closed isimportant to the convection process.MEDIUM0ºFDBEEFRAREAN-WTU--5. When finished, turn the far right control dialOFF by pushing the black OFF / ON rocker switchto the left OFF position, and unplug your grillafter each use.** For best results and to prevent flareups, cleanyour grill after every use. To clean, slidedrip tray out from back grill. Remove vaporizorplate and scrape with a metal brush.15 5 º F015TIP: Use of seasoned baking stones, particularlyfor breads and grill roasted pizza, can enhance thequality of your baking. Experiment and discoverwhat works best for you.2. For professional baking, place pan, sheet or dishon grill.5. Turn COOK CONTROL SYSTEM dial todesired setting.16Baking1. Follow the steps for Getting Started outlined onpage 4.CAUTION: Probe gets hot during use. ALWAYSuse the probe heat shield, or high-temperaturegloves, when inserting and removing probefrom meat or fillet. NEVER let heat shield remaininside hood when cooking.ºF8. Cook Number Grill Cleaning and MaintenanceALWAYS BE SURE THE GRILL IS UNPLUGGEDBEFORE CLEANINGCAUTION: Be sure the grill is OFF and cool beforecleaning.Periodically, remove the grilling grates andsearing plate and wash in soap and warm water.Use a wash cloth or vegetable brush to clean thecooking grids.Burning-off the grill after every cookout willkeep it ready for instant use. However, once ayear you should give the entire grill a thoroughcleaning to keep it in top operating condition.Follow these steps:CAUTION: Never try to clean the cooking gridsuntil they are cool to the touch.Cleaning the Grease Drawer, Vaporizor Plate,and Aluminum TrayTo reduce the chance of fire, the grease drawervaporizor plate and aluminum tray should beinspected before each grill use. Remove anygrease from the tray and scrape any residue offthe surface of the vaporizor plate. Wash withsoap and warm water. Aluminum tray should bereplaced often. To order more trays, contact yourdealer and reference part number SRVLGE60.As with all appliances, proper care andmaintenance will keep this grill in top operatingcondition. By following these cleaningprocedures on a regular basis, your Fire StoneLegacy Grill will stay clean and work properlywith minimum effort.WARNING Fire & Shock Risk1. Remove the grilling grate on left for cleaning.The vaporizer plate is designed to pull out forcleaning with the grease tray from the back ofthe unit. It can be removed for cleaning or justscaped into place.2. Using a putty knife or similar utensil, carefullyscrape the area below the heating element onthe left side for optimal performance.Be careful NOT to scrape the heating elementdirectly.1. Unplug the grill.2. Brush the inside and bottom of the grill witha stiff wire brush, and wash with soap andwarm water. Rinse thoroughly and let dry.Cleaning Exterior SurfacesBefore initial use, and periodically thereafter,wash the grill using soap and warm water. Use awash cloth or sponge for this process. Do not usea stiff wire or brass brush that might scratch thestainless steel surface.Cleaning Exterior Surfaces–Stainless SteelWeathering and extreme heat can cause exteriorstainless steel surfaces to turn tan in color.Follow these steps for the best cleaning results:1. Remove dirt or grease using hot water &soap and a soft cloth. Then, polish and treatthe stainless surfaces using only an approvedstainless steel care product. Never use abrasivecleaners or scrubbers as they will damage thesurface as well as destroy the printed graphicsurfaces used for operating instructions.2. Finish by wiping your grill clean with a softcloth and allow to air dry before starting thegrill.Black Porcelain or Powder Coated Finish1.
