The ingredients ineach recipe are combined in such a wayto give you as much alkalinity asEggsMost baking recipes use eggs as abinding agent for baking foods likecakes, muffins, cookies and many more.However, whole eggs are acidifying. Foralkaline recipes, we are replacing eggwith flaxseed egg substitute. This canbe done by grinding flaxseed to a finepowder and simmer it in water. THEALKALINEDIET.ORGJuicesNatural Almond Dates MilkINGREDIENTS:1 ½ cups of raw almonds4 cups of filtered or spring water3-8 datesDIRECTIONS:1. Soak 1½ cup of fresh raw almonds in purewater overnight. Make sure that the watershould be slightly above the nuts to allowfor swelling.2. The next morning, drain the soakedalmonds, fill your blender with the almondsand add 2 cups of fresh water until you getwhite milk-like creamy liquid.3. You can add hint soak your dates in themorning for an hour before blending withdates (that have been soaked for at leastan hour) if you like a little sweetness toyour milk.4. Strain once to remove almond granules.You will get delicious and creamy milk thatis all natural, fats free and sugar free. Cut Avocado into two parts and scoop outthe pulp.4. Blend papaya, avocado, mint leaves andwater until smooth and pour little wateroccasionally.2. Slice 3 papayas without the papaya’s outerskin.5. Finally, add Celtic salt, raw honey and limejuice and blend well.3. Cut the 2 limes into halves and squeezethe juice into a container.6. THEALKALINEDIET.ORGBREAKFASTBuckwheat Crêpes with Tomatoes & SpinachINGREDIENTS:Buckwheat Crêpes:1 cup buckwheat flour1 cup whole wheat or all purpose flour½ tsp Celtic salt2 eggs*1 egg 1 tbsp ground flax seedsimmered in 3 tbsp of water1 tbsp Olive oil1 tbsp coconut butterToppings:1 cup chopped fresh tomatoes1 cup lightly packed baby spinach leaves½ cup sautéed, chopped onions3 bell peppers (different colors)¼ cup of chopped fresh basilDIRECTIONS:1. Sift the flour together with the Celtic salt.Add the egg, olive oil, and whisk allingredients for one minute. Slowly add thewater until the texture is smooth.2. Cover with a cloth over the top of the bowland let sit at room temperature for 2 hours.Before frying, stir in enough water to bringthe batter to the consistency of thin cream.3. Heat a pan at medium heat with coconutbutter and add enough mixture to the sizeof the crepes you want.4. Place ¼ cup each of tomatoes, bellpeppers, basil and spinach down thecenter of a crepe. Combine pumpkin puree and rice granolain a bowl.2. Mix almond milk, honey and zest inanother bowl.3. Swirl in pumpkin mixture. Top withstrawberries and almonds (or your favoritefruits).4. Add desired amount of grain in pan, andadd cold water to about ½ above the grainline.3. Mash/blend the banana.4. Add the rest of the ingredients and mixthem well. Ready to serve.2. THEALKALINEDIET.ORGVegan Scrambled Tofu SandwichINGREDIENTS:1 pound regular tofu - firm2 tbsp Bragg Liquid Aminos (or Tamari)¼ tsp turmeric½ tsp Celtic salt1-2 tbsp extra-virgin olive oil¼ cup sunflower seeds2 spring onions, finely chopped1 onion, diced1 Whole meal breadOrganic raisins to tasteA few pieces of lettuceDIRECTIONS:1. Drain and mash tofu. Mix with Bragg's,turmeric, and salt. Set aside.2. In hot pan, heat olive oil over medium heat.Add sunflower seeds and cook for a fewminutes, stirring occasionally. Add onionand bell pepper. Steam-fry the mixture for3 minutes.233. Add the tofu and spring onion into the pan.Steam fry for 7 minutes.4. Select any of the green veggies or moreand steam them lightly. Cut the vegetablesinto bite sized pieces. Steam thevegetables lightly.2. Add a little Celtic salt and lemon juice.Serve them hot, topped with a little virgincoconut oil.3. Pour flaxseed oil into a small bowl. Addlemon or lime juice. Add raw honey, saltand pepper. THEALKALINEDIET.ORGZucchini Nut LoafINGREDIENTS:1½ cups whole wheat flour1 teaspoon cinnamon½ teaspoon baking soda½ teaspoon nutmeg½ teaspoon baking powder½ teaspoon Celtic salt1 cup organic molasses1 cup shredded unpeeled zucchini2 Eggs **1 egg 1 tablespoon ground flax seedsimmered in 3 tablespoons of water½ cup olive oil¼ teaspoon shredded lemon peelDIRECTIONS:1. Mix together flour, cinnamon, baking soda,nutmeg, baking powder, and salt. Setaside.3. Bake in oven at 350 degrees for around anhour. Cool in pan for 10 minutes. Removefrom pan and let it cool on rack. Wrap andstore.2. Beat together molasses, eggs, andshredded zucchini. Mix in olive oil andlemon peel. Combine zucchini mixture intoflour mixture. Slice avocados in half.2. In a bowl, mix the diced jicama, celery,cherry tomatoes, sunflower seeds,chopped onion, salt and oil.3. THEALKALINEDIET.ORGBruschetta on Spelt ToastINGREDIENTS:4 slice of spelt bread4 organic tomatoes, diced1 small onion, diced small2 sprigs organic basil (top 3 inches, 9-10leaves)1 tbsp organic olive oil2 cloves of garlic, peeled and halves1 tsp Celtc saltDIRECTIONS:1. Sprinkle salt over tomatoes and let stand½ hour.2. Mix the tomatoes, onion, basic, olive oil,and chopped garlic together (set aside foran hour or more).4. After grilled, rub one side with garliccloves.5. Place the tomatoes mixture over the breadand drizzle olive oil and season for taste.Enjoy3. Place potatoes, celery, salt, olive oil andwater in a large cooking pot. Cover andheat.2. Cut the stems of the beets from the leaves.Slice the stems into bite size pieces.3. Add the garlic, onion and the sliced beetstems to the soup. When the soup beginsto boil, keep the fire low but ensure that itcontinues to boil.294. Add the grated beets, cabbage, andcarrots to the soup. Add dill weed to coverthe top of the soup. Cut the beet leavesinto pieces and add them into the soup.5. Reduce heat, cover and simmer untilvegetables are tender, around 20 - 30minutes. Ready to serve!

Wash kale thoroughly under running water.Remove the leaves from the stems andchop it into bite size pieces.2. Heat a large pan on medium heat and addthe pine nuts until they begin to turn brown.Once toasted, set aside pine nuts.3. Add the olive oil to the pan. Then addsaute onion until it turns translucent,followed by garlic for a minute. Add kaleand stirring often till it is completely wilted.This would usually take around 3-5minutes.4. Sift the flour and combine it with salt in alarge mixing bowl. Slowly add the water tomake soft dough. Knead well, folding andpushing till the dough is pliable whichwould be around 7 minutes.2. Cover with a wet cloth and set aside for anhour or two.3. While waiting, prepare the lentil curry.Preparing the Lentil Curry:4. Combine lentils and vegetable stock in apan. Simmer until soft and drain the water.Heat oil and cook the onions till soft.375. Add garlic and curry powder and currypowder. Heat until all the contents aresizzling. Add curry lentils and choppedtomatoes and simmer for 15 minutes. Thelentil curry is now ready.Back to the Chapati:6. Knead the dough again for severalminutes. Then tear off the dough intoseveral small balls. Roll out each ball flat,circular shape, with fairly thin rounds.7. Bake on a hot griddle for a few secondsbefore turning over. With a pair of tongs,place it over a low direct gas flame andpuff it. Place on a napkin and it’s ready forserve.
