Baking with DiabetesHealth CornerBy substituting healthy foods for butter, you can make old favorite recipes diabetes friendly. Here are a fewsuggestions for you to try when you are baking:Avocado. The creamy texture of avocado makes it a good substitute for butter. It also containsheart-healthy fats and fiber that contribute to a well-balanced diet. You can substitute equalamounts of avocado for butter.Unsweetened applesauce. Another option is substituting half the amount of butter and sugarwith unsweetened applesauce. It helps cut not only the fat and sugar, but also the carbs.Stevia. This plant-based sugar substitute is often recommended by nutritionists.Swap out white flour. Nut flours are more stabilizing for blood sugar than baking with traditionalwhite flour. But the taste can take some getting used to. Faye Somers 1/3/1921-11/16/2020Faye Somers passed away on November16, 2020. She was an active and longtime member of the Paducah SeniorCenter and would have celebrated her100th birthday in January. She was a devoted member of St. Paul LutheranChurch. She was also a member of theMcCracken County Homemakers Club, aKentucky Colonel and Duchess ofPaducah. She was preceded in death byher husband, Robert Somers and stepson Allen Somers. Home Repair E-HOMESElderly Home Owners Maintenance & Everyday SecurityIn 1999 the local United Way completed a needs assessment forMcCracken County. It was found that there was not an agency thatcould assist low income, senior home owners maintain a safe home.This was the birth of our E-HOMES program.Many times older home owners have worked hard to pay off the homebut as they age they are not physically or economically able to maintainthe safety and security of the home. We can assist with minor maintenance, electrical, plumbing, locks, window repair, safety and security.We also help with mobility adaptations such as grab bars in the bathroom, tub or shower or hand held shower units, railing on your steps ornew low profile thresholds and limited ramps. Transportation ProgramSenior TransportationProviding rides for Sr. Adults in McCracken County.Pre-registration is required at the Senior Center.Transport to the following locations:To the Senior Center for lunch & activities . Pharmacy .Medical Appointments Food Stamp Office Social Security Office Government Offices-upon approval . The Bank of your choice,once per month . Grocery Tues. & Fri. Only. You can be transported to the grocery closestto your home or the closest Kroger. (No Wal-Mart rides) Your packages are limited to 4 bags thatyou must be able to handle yourself. We strongly recommend that you use a foldable cart to holdthe groceries so they will not roll around the bus. The driver is not responsible to assist in carrying the purchases or loading or unloading the cart, although the driver will assist the rider.We suggest a donation of 1 each way. We partner with the Paducah Area Transit-PATS to provide rides for our Seniors. Nutrition ProgramsHot Lunch ProgramsOur meal program is composed of two areas of focus: The Congregate Meal served at the SeniorCenter and the Meal Delivery Program. Both programs require that theparticipant be 60 years of age or older.Our lunches are developed by a certified dietitian and are 1/3 of the adult daily foodrequirement. We use low sodium recipes. The hot nutritious lunch includes meat,vegetables, whole wheat roll, milk and fruit or dessert .We offer Congregate Lunch served at the Senior Center dining room that isserved promptly at 12 noon Monday through Friday for a suggested donation of 2.00. We serve coffee, ice tea and milk with the congregate lunches. We suggestyou arrive no later than 11:45 for lunch.Meal Delivery is a limited program for our homebound senior individuals in McCracken County. Delivery clients must be homebound, living alone and have severe debilitating ailments that keep them from cooking their own meals. This program also requests a donation for each meal.Call and talk to Jodi to complete an application and determine eligibility.
