To eliminate the hazard of reaching overhot surface burners, cabinet storageshould not be provided directly above aunit. If storage is provided, it should belimited to items which are used infrequentlyand which are safely stored in an areasubjected to heat from an appliance.Temperatures may be unsafe for someitems, such as volatile liquids, cleaners oraerosol sprays.A faint gas odor may indicate a gas leak.If a gas odor is detected, shut off gassupply to the cooktop. Call your installer orlocal gas company to have the possibleleak checked. Never use a match orother flame to locate a gas leak.IN CASE OF FIRETurn off appliance and ventilating hood toavoid spreading the flame. Extinguish flamethen turn on hood to remove smoke andodor. Smother fire or flame in a pan with a lidor cookie sheet. NEVER pick up or move a flaming pan.Do not use water on grease fires. Usebaking soda, a dry chemical or foam-typeextinguisher to smother fire or flame.CHILD SAFETYNEVER leave children alone orunsupervised near the appliance when itis in use or is still hot.NEVER allow children to sit or stand onany part of the appliance as they could beinjured or burned.Children must be taught that the applianceand utensils on it can be hot. Be sure you knowwhich knob controls which surface burner.Make sure the correct burner is turned onand that the burner has ignited. Whencooking is completed, turn burner offbefore removing pan to prevent exposureto burner flame.Always adjust surface burner flame sothat it does not extend beyond the bottomedge of the pan. An excessive flame ishazardous, wastes energy and maydamage the appliance, pan or cabinetsabove the appliance.NEVER leave a surface cooking operationunattended especially when using a highheat setting or when deep fat frying.Boilovers cause smoking and greasyspillovers may ignite. Clean up greasyspills as soon as possible. Do not use highheat for extended cooking operations.NEVER heat an unopened container onthe surface burner. Pressure build-up maycause container to burst resulting in seriouspersonal injury or damage to the appliance.Do not touch grill and surface burnerareas, areas near burners, or metal landingspace during and after use. These areasmay be hot enough to cause burns.Use dry, sturdy potholders. Damp potholders may cause burns from steam.2Dishtowels or other substitutes shouldnever be used as potholders because theycan trail across hot surface burners andignite or get caught on appliance parts.Always let quantities of hot fat used fordeep fat frying cool before attempting tomove or handle.Do not let cooking grease or otherflammable materials accumulate in or nearthe cooktop. Restriction of normal air flow mayresult in unsafe operation.UTENSIL SAFETYUse pans with flat bottoms and handlesthat are easily grasped and stay cool. Avoidusing unstable, warped, easily tipped orloose-handled pans. Also avoid using pans,especially small pans, with heavy handlesas they could be unstable and easily tip.Pans that are heavy to move when filledwith food may also be hazardous.Do not use cookware on the grill section ofthis appliance.Be sure utensil is large enough to properlycontain food and avoid boilovers. Pan sizeis particularly important in deep fat frying.Be sure pan will accommodate the volumeof food that is to be added as well as thebubble action of fat.To minimize burns, ignition of flammablematerials and spillage due to unintentionalcontact with the utensil, do not extendhandles over adjacent surface burners.Always turn pan handles toward the sideor back of the appliance, not out into theroom where they are easily hit or reachedby small children.Never let a pan boil dry as this coulddamage the utensil and the appliance.

The use of devices oraccessories that are not expresslyrecommended in this manual can createserious safety hazards, result inperformance problems, and reduce thelife of the components of the appliance.CLEANING SAFETYTurn off all controls and wait for applianceparts to cool before touching or cleaningthem. Do not touch the burner grates orsurrounding areas until they have hadsufficient time to cool.Clean appliance with caution. Use care toavoid steam burns if a wet sponge or clothis used to wipe spills on a hot surface.Some cleaners can produce noxious fumesif applied to a hot surface.IMPORTANT SAFETYNOTICE ANDWARNINGThe California Safe Drinking Water andToxic Enforcement Act of 1986 (Proposition65) requires the Governor of California topublish a list of substances known to theState of California to cause cancer orreproductive harm, and requiresbusinesses to warn customers of potentialexposures to such substances.Users of this appliance are hereby warnedthat the burning of gas can result in lowlevel exposure to some of the listedsubstances, including benzene,formaldehyde and soot, due primarily tothe incomplete combustion of natural gasor liquid petroleum (LP) fuels. Properlyadjusted burners will minimize incompletecombustion. Exposure to these substancescan also be minimized by properly ventingthe burners to the outdoors.IMPORTANT NOTICE REGARDING PETBIRDS: Never keep pet birds in the kitchenor in rooms where the fumes from thekitchen could reach. Birds have a verysensitive respiratory system. Fumesreleased during an oven self-cleaning cyclemay be harmful or fatal to birds. Fumesreleased due to overheated cooking oil,fat, margarine and overheated non-stickcookware may be equally harmful.SAVE THESE INSTRUCTIONS FOR FUTURE REFERENCEDUCTING INFORMATIONJenn-Air’s ventilation system is designedto capture both cooking fumes and smokefrom the cooktop surface. If the systemdoes not, these are some ductinginstallation situations to check:1 6" diameter round or 3 /4" x 10"rectangular ducting should be used forduct lengths 10'-60'. Note: 5" diameterround ducting may be used if theduct length is 10' or less. No more than three 90 elbows shouldbe used. Distance between elbowsshould be at least 18". Recommended Jenn-Air wall cap MUSTbe used. Make sure damper movesfreely when ventilation system isoperating.the responsibility of the installer andquestions should be addressed first by theinstaller. The installer should very carefullycheck the ducting installation instructions. There should be a minimum clearanceof 4" for cooktop installed near a sidewall. Use the Flow Tester Card provided withyour appliance to check the air flow.If there is not an obvious improperinstallation, there may be a concealedproblem such as a pinched joint,obstruction in the pipe, etc. Installation is3

USING YOUR COOKTOPSURFACE CONTROLSCAUTIONS: If flame should go out during acooking operation, turn the burneroff. If a strong gas odor is detected,open a window and wait five minutesbefore relighting the burner. Be sure all surface controls are set tothe OFF position prior to supplyinggas to the cooktop. NEVER touch cooktop until it hascooled. Expect some parts of thecooktop, especially around theburners, to become warm or hotduring cooking. Use potholders toprotect hands.Graphics next to the knob identifywhich burner the knob controls.For example, the graphic at rightshows the right front burner location.SETTING THECONTROLS1. Place a pan on the burner grate. (Topreserve the grate finish, do not operatethe burners without a pan on the grateto absorb the heat from the burnerflame.)2. Push in knob and turn immediatelycounterclockwise to the Lite settinguntil burner ignites. A clicking (spark) sound will be heardand the burner will light. All ignitorswill spark when any surface burnerknob is turned to the Lite position.3. After ignition, turn knob clockwise todesired setting. The ignitor will continue to sparkuntil the knob is turned past theLite position.OPERATING DURING APOWER FAILURE1. Hold a lighted match to the desiredsurface burner head.2. Push in and turn the control knobslowly to Lite.3. Adjust the flame to the desired level.CAUTION:PILOTLESS IGNITIONThe size and type of cookware will affect the heat setting.SettingsUsesHiMIf the surface burner does not light, checkif ignitor is broken, soiled or wet. If clogged,clean the small port beneath the ignitorusing straight pin.SUGGESTED HEAT SETTINGSedUse Hi to bring liquid to a boil, or reach pressure in apressure cooker. Always reduce setting to a lower heat whenliquids begin to boil or foods begin to cook.Hi LiteLoPilotless ignition eliminates the need for aconstant standing pilot light. Each surfaceburner has a spark ignitor. When cleaningaround the surface burner use care. Ifcleaning cloth should catch the ignitor, itcould damage it preventing ignition.When lighting the surface burners, besure all of the controls are in the OFFposition. Strike the match first and holdit in position before turning the knob toLite.CAPAn intermediate flame size is used to continue cooking. Foodwill not cook any faster when a higher flame setting is usedthan needed to maintain a gentle boil. Water boils at the sametemperature whether boiling gently or vigorously.PORTSIGNITORPORT BELOW IGNITORLoHi LiteSome cooking may take place on the Lo setting if the pan iscovered. It is possible to reduce the heat by rotating the knobtoward OFF. Be sure flame is stable.MediteHi LUse Lo to simmer foods, keep foods warm and meltchocolate or butter.MedSURFACECONTROLKNOBSOffLoLoUse to turn on thesurface burners. Aninfinite choice of heatsettings is availablefrom Lo to Hi. At the Hi setting a detentor notch may be felt. The knobs can be seton or between any of the settings.4

USING YOUR COOKTOP,CONT.CONTROL LOCATIONSCOOKTOPTo prevent the cooktop fromdiscoloring or staining: Clean cooktop after each use. Wipe acidic or sugary spills as soonas the cooktop has cooled as thesespills may discolor the porcelain.12Fan3456SEALED BURNERS1. Left rear surface burner or grill (BTU8,000 natural/7,500 LP).2. Left front surface burner or grill (BTU8,000 natural/7,500 LP).3. Center rear surface burner (BTU10,000 natural/6,500 LP).4. Center front surface burner (BTU10,000 natural/9,000 LP).5. Right rear surface burner (BTU 10,000natural/6,500 LP).6. Right front surface burner (BTU 10,000natural/9,000 LP).IMPORTANT: When using a JGA8100 surface burnerassembly with control locations #1 and#2, the control knob may be turned toa position lower than the Lo setting.(The Lo setting is set for the grill burner.) LP gas users only: Use the center rearand right rear burners to simmer foods,keep foods warm and melt chocolateor butter. Use the front burners to bringliquids to a boil or for large quantitycooking.NOTES: A properly adjusted burner with clean ports will light within a few seconds. If usingnatural gas, the flame will be blue with a deeper blue inner cone.If the burner flame is yellow or is noisy, the air/gas mixture may be incorrect.Contact a service technician to adjust. (Adjustments are not covered by thewarranty.)With LP gas, some yellow tips on the flames are acceptable. This is normal andadjustment is not necessary. With some types of gas, you may hear a “popping” sound when the surface burneris turned off. This is a normal operating sound of the burner. If the control knob is turned very quickly from hi to lo, the flame may go out,particularly if the burner is cold. If this occurs, turn the knob to the OFF position,wait several seconds and relight the burner. Leave a minimum of 11/2" between side of pan and surrounding surfaces such ascountertop, back splashes or side walls, to allow heat to escape and avoid possibledamage to these areas. To improve cooking efficiency and to prevent possible damage to the cooktop orpan, the flame must be adjusted so it doesnot extend beyond the edge of the pan.5The sealed burners of your cooktop aresecured to the cooktop and are notdesigned to be removed. Since the burnersare sealed into the cooktop, boilovers orspills will not seep underneath the cooktop.However, the burner heads should becleaned after each use. (See page 9 forcleaning directions.)BURNER GRATESThe grates must be properly positionedbefore cooking. Improper installation ofthe grates may result in chipping of thecooktop.Do not operate the burners without apan on the grate. The grate’s porcelainfinish may chip without a pan to absorbthe heat from the burner flame.Although the burner grates are durable,they will gradually lose their shine and/ordiscolor, due to the high temperatures ofthe gas flame.

SEALED BURNERCARTRIDGESTO INSTALL SEALED BURNERCARTRIDGE:GRILL INSTALLATIONThe grill assembly consists of two grillgrates and a grill burner. Only install thegrill on the LEFT SIDE of your cooktop.1. Be sure control knobs are turned OFF.2. Clean basin of any greaseaccumulation. (See page 9 for cleaningrecommendations.)3. With the back raised, position the burnercartridge with the mixer tube openingsand ignitor rods toward the orificesand terminal receptacle. Slide thecartridge until the tubes and ignitorsstart to engage, then lower the cartridgeso that it rests on the cooktop surface.Gently slide forward to fully engage.TO INSTALL GRILL:1. Before installing grill components, besure controls knobs are in the OFFposition.2. Position the grill burner with mixertubes and ignitor rod toward the orificesand terminal receptacle. Slide theburner until the tubes and ignitorengage, then lower the burner until itrests on the mounting pins.USING THE GRILL Before the first use, wash grill grates inhot soapy water, rinse and dry. Then“season” the surface by wiping on athin coating of cooking oil. Removeexcess oil by wiping with paper towel.This procedure should be repeatedwhen either: a) cleaning in thedishwasher since the detergent mayremove seasoning or b) anytime asugar-based marinade (for example,barbecue sauce) is going to be used. Preheat the grill on Hi for 5 minutes.Preheating improves the flavor andappearance of meats and quickly searsthe meat to help retain the juices. Use nonmetallic spatulas or utensils toprevent damaging the nonstick grill gratefinish.TO REMOVE SEALED BURNERCARTRIDGE: Excessive amounts of fat should betrimmed from meats. Only a normalamount is necessary to produce thesmoke needed for that smoked,“outdoor” flavor. Excessive fat cancreate cleaning and flare-up problems.1. Control knobs should be in the OFFposition and the cooktop should becool. Allowing excessive amounts of greaseor drippings to constantly flare-up voidsthe warranty on the grill grates.3. Place the grill grates on top of thecooktop.2. Lift up the rear edge of the cartridgeuntil the bottom of the cartridge clearsthe basin. (Lifting the cartridge toohigh while still engaged could damagethe ignitor rods and mixer tubes.)3. To disengage the cartridge, hold by thesides and pull away from the terminalreceptacle and orifices. Lift out whenfully unplugged.4. Do not stack cartridges where theymay fall or be damaged.NOTE: Optional Sealed BurnerCartridge, model JGA8100, can replacethe grill burner assembly.NOTE: Before using the grill for thefirst time, heat the grill burner to removethe protective shipping coating. Heatthe grill burner on Hi for 10 minutesand use the vent system to remove anyadditional smoke during cooling.TO REMOVE GRILL:1. Be sure control knobs are in the OFFposition and the grill components arecool.2. Remove grill grates.3. Lift the rear of the burner up slightly.Slide the burner away from the orificesand terminal receptacle.6 Excessive flare-ups indicate that eitherthe grill interior needs to be cleaned orthat excessive amounts of fat are in themeat or the meat was not properlytrimmed. Grease drippings will occasionallyignite to produce harmless puffs offlame for a second or two. This is anormal part of the cooking process. NEVER LEAVE GRILL UNATTENDEDDURING GRILL OPERATION.Cont.

USING YOUR COOKTOP, SHOULD EXCESS GREASE CAUSESUSTAINED FLARE-UPS:1. Turn on the fan manually.2. Immediately turn grill controls toOff.3. Remove meat from grill.IMPORTANT Do not use aluminum foil inside thegrill area. Do not use charcoal or wood chips inthe grill area. Do not allow burner basin to becomeoverloaded with grease. Cleanfrequently. Do not cover gratescompletely with meat.Leave air spacebetween each steak,etc. to allow properventilation as wellas prevent flareups.CONT. When basting meats or applying saucesto foods, remember that excessiveamounts accumulate inside your grilland do not improve the food flavor.Apply sauces during the last 15 to 20minutes of cooking time unless recipespecifies otherwise. Plus, anytime asugar-based marinade (for examplebarbecue sauce) is going to be used,the grates should be "seasoned" priorto preheating. (See Using the Grillsection.) There are many meat marinades whichwill help tenderize less expensive cutsof meat for cooking on the grill. Be sure to follow directions for usingthe grill. Use tongs with long handles or spatulasfor turning meats. Do not use forks asthese pierce the meat, allowing juicesto be lost. Score fat on edges of steak, but do notcut into meat, to prevent curling whilecooking. For the attractive “branded” look onsteaks, be sure grill is preheated. Allowone side of meat to cook to desireddoneness, or until juices appear on thetop surface, before turning. Turn steaksand hamburgers just once.Manipulating food causes loss of juices. To operate theventilation systemmanually, turn thefan knob clockwiseto Lo or Hi position.HiLOff For best results, buy top grade meat.Meat that is at least 3/4 inch will grillbetter than thinner cuts.The built-in ventilation system removescooking vapors, odors and smoke fromfoods prepared on your cooktop and grill.o Suggested cooking times and controlsettings (see Grill guide, pg. 8) areapproximate due to variations in thefoods.THE Air Grille: The air grille lifts off easily.Wipe clean or wash in dishwasher orsink with mild household detergents. Toprevent scratching the surface, do notuse abrasive cleaners or scrubbing pads. Filter: Turn off ventilation system beforeremoving. The filter is a permanent typeand should be cleaned when soiled.Clean in sink with warm water anddetergent or in dishwasher. Certain foods, such as poultry andnon-oily fish, may need some extra fat.Brush with oil or melted butteroccasionally while grilling.VENTILATION SYSTEMGRILLING TIPSCARE AND CLEANING OFVENTILATION SYSTEM The ventilation system will operateautomatically on Hi when the grillburner is in use. The fan can be used to remove strongodors from the kitchen as whenchopping onions near the fan.7IMPORTANT: DO NOT OPERATESYSTEM WITHOUT FILTER. Filter shouldalways be placed at an angle. As youface the front of the cooktop, the top ofthe filter should rest against the left sideof the vent opening. The bottom shouldrest against the right side of the ventchamber at the bottom. (Note: If filteris flat against the fan wall, ventilationeffectiveness is reduced.) Ventilation Chamber: This area, whichhouses the filter, should be cleaned inthe event of spills or whenever it becomescoated with a film of grease. It can becleaned with paper towel, damp cloth,or sponge and mild household detergentor cleanser.
