The amountof mixing, kneading, rising, and bakingtimes and temperatures have beenpre-programmed for best results.1. White Bread or basic setting with an“Add Ingredient” signal.2. Whole Wheat Bread for recipescontaining whole wheat flour.3. Whole Wheat Rapid for wholewheat bread baked in a shorter timeframe than normal.4. French Bread – This bread is typically low in fat and sugar and has acrispy crust with a chewy interior.5. Sweet Bread – This program is programmed for dough with a higherfat or sugar content. Has “AddIngredient” signal.6. Quick Bread/Cake – This programallows you to make baked goodsthat do not use yeast for rising.7. Dough – This program does the hardwork for you. The ingredients aremixed, kneaded, then allowed to rise.When the program is finished, thedough will be ready to shape for thesecond rising before you bake inyour oven.8. Rapid – This setting is for a basicWhite Bread that will be ready in59 minutes. The crust color isautomatically set to Medium inthis program.NOTE: The “Add Ingredient” signal is inthe White and Sweet Bread programs.This signal sounds about 30 minutes4into the mixing/kneading program. Make sure breadmaker is unpluggedand placed on a stable, level surface.Remove the bread pan and kneadingpaddle and wash before first use.2. Place the bread pan on the counterand place the kneading paddle ontothe shaft in the bottom of the breadpan. The arrow on the paddle shouldpoint up. Push the kneading paddleall the way down. About 1 8-inch ofthe shaft will show above the kneading paddle.3. Measuring carefully, add the ingredients to the bread pan in the orderlisted in the recipe. Liquid ingredients first, then dry ingredients, andadding the yeast last.4. Lift the bread pan by the handle andplace in the oven chamber. Place thebread pan arrow at the front, aligningwith the oven chamber arrow. Pushthe bread pan all the way down tolock into the bottom gear in the ovenchamber. Bread pan must click inplace for proper mixing and kneading. Close the cover.5. Plug in breadmaker. A beep will soundand the display window will blink SEL.Press PROG until the desired breadprogram number is shown in the display window.6. Now select the Crust Color bypressing CRUST. (Only available incycles 1, 2, 4, 5, and 6.) A smallarrow will move along the bottom ofthe display window indicating whichcrust color has been selected.7. If not using the programmable timerfeature, press START/CANCEL tostart the breadmaker. The total timebefore the bread is ready will beshown in the display window. If usingthe programmable timer, set thetimer then press START/CANCEL.If START/CANCEL is not pushedwithin 60 seconds, the display will goback to “SEL.” See page 4 to program a delayed start.NOTE: During the White and SweetCycles, a beep will sound about30 minutes after the breadmakerstarts mixing. This is the AddIngredient signal to add raisins, driedfruit or nuts if the recipe instructs.8. The breadmaker will beep when thebread is done. END will be shownin the display window. For bestresults, the bread should beremoved from the bread pan immediately. If not however, thebreadmaker will start a Keep Warmcycle for about 1 hour.9. Press START/CANCEL and holdfor three seconds to turn off thebreadmaker. Unplug the unit. SELwill blink in the display window untilthe unit is unplugged. Raise thecover and using an oven mitt, liftthe bread pan straight up toremove from the oven chamber.10. Using oven mitts on both hands,turn the bread pan upside downand shake the loaf until it falls out ofbread pan. Locate kneading paddle. It may remain on the shaft inthe bottom of the bread pan or itmay have baked into the bottom ofthe loaf of bread. Let bread cool onrack for 10 minutes before slicing.NOTES: Do not use any metal utensils inthe bread pan. This could damage the non-stick coating. After making a loaf of bread,the breadmaker must cool downbefore making another loaf. Leavethe cover open to assist the cooling process. After 30 minutes, ifyou are still unable to turn the uniton, unplug it. After waiting a fewseconds, plug it in again. This willreset the unit. The cover of the breadmakeris designed to be taken off andreattached easily. This will helpwhen cleaning. However, neverimmerse the cover; simply wipeclean with a damp cloth. The unit is not operating correctlyif the control panel displays “EL”or “ES” codes. Call CustomerService if these codes appear.5

Paying close attention to these areas will go a long way towardsuccessful breadmaking.MeasuringExact measuring is very importantwhen using a breadmaker. For themost precise measurements youshould use two different types of measuring cups. Liquid measuring cups areusually clear glass or plastic with aspout for ease of pouring. Measure theliquid ingredient into the cup but do notraise the cup to your eye level to check.Set the cup on the counter and loweryourself to check the liquid level.Dry measuring cups are usually sold ina nested set that are level across thetop of the cup. To measure flour, firststir the flour to aerate it. Then spoonflour into the measuring cup and usingthe straight edge of a knife, scrape offthe excess. Do not shake the flour tolevel.Loaf SizesOne pound, 11 2-pound, and 2-poundbreadmakers do not actually refer tothe weight or size of the loaf. Theseactually refer to the capacity of thebread pan in the breadmaker. Thisbreadmaker pan has a 2-pound loafcapacity and can also make a 1-poundor 11 2-pound loaf.Prepared MixesMost prepared mixes purchased from agrocery store work best on Program 1.IngredientsBread flour is recommended in mostyeast-bread recipes. See Measuring tipsto ensure proper flour measurement.Flour varies by region. For example,American flour is milled from hard springwheat. Canadian flour is milled from hardwinter wheat. The percentage of naturalgluten varies, therefore, the bread varies.6Gluten, a protein, is the component thatgives bread its structure. While breadflour has a higher gluten content thanall-purpose flour, all-purpose flour willalso work well. Gluten should be addedto all-purpose flour. Gluten is available atspecialty stores, health food stores, andsome grocery stores. Follow packagedirections for the amount of glutenneeded per cup of flour. Gluten maybe added to bread flour to eliminate aconcave top on the bread loaf.Yeast formulated specifically for breadmakers has a finer grain and issometimes called instant yeast. Regularactive dry yeast can also be used in thebreadmaker. Make sure the yeast isfresh. Check the expiration date printedon every package or proof the yeast. Toproof, mix 1 cup hot tap water, 1 tablespoon of yeast, and 1 teaspoon of sugar.Let sit for 5 minutes. If the mixture bubbles or “grows” the yeast is active andfresh.Egg yolk should be broken in recipesthat use eggs.The WeatherExtremely dry or extremely damp andhumid weather can affect your breadbecause flour absorbs moisture. Duringthe first 5 to 10 minutes of the breadmaker mixing and kneading, look atthe dough in the machine. The doughshould look like a smooth ball. It shouldnot be dry or crumbly. It should not besticky. Make any adjustment to doughby adding water or flour, 1 tablespoonat a time, while the dough is still in thefirst stages of mixing.

With the bread pan removed from the breadmaker, press PROGRAMSELECT until the desired program number is displayed. Select CRUST color thenpress START/CANCEL. The total program time will be displayed. PressSTART/CANCEL for 3 seconds to turn the breadmaker off.Cycles 2 and 3 begin with a rest period. The breadmaker will not immediately mixafter pressing START. See the Chart for rest period times for each program. Thebreadmaker stabilizes the temperature for the program.How To Clean1. Unplug breadmaker and allow tocool.2. Remove the bread pan from theoven chamber and remove thebread. Locate the kneading paddlein the bread or remaining on theshaft in the bread pan.NOTE: If the kneading paddle is difficult to remove from the shaft, fill thebread pan with hot, soapy water andlet soak for 15 to 30 minutes. Pourthe water out. Grasp the kneadingpaddle and twist back and forth. Itshould release, then pull off.3. DO NOT immerse the bread pan inwater or place in a dishwasher. Fillthe bread pan with hot, soapy water.Wash bread pan and kneading paddle with a soft cloth. Rinse and dry.NOTE: Do not use abrasive cleanersor steel wool to clean the bread pan.These could damage the non-stickcoating.4. Wipe the outside of the breadmakerwith a damp cloth. Do not immersein water or other liquid.7

Coolbread completely before placing inplastic bags. Bread stored in the refrigerator quickly becomes stale.Conversely, bread freezes very well.Let bread cool completely then place inan airtight plastic bag and freeze for upto 6 months. It’s a good idea to slicebread prior to freezing if you are onlyusing a few slices at a time. Let breaddefrost at room temperature in theplastic bag.Why is my bread raw on top?Most likely, the bread rose too high andtouched the top of the machine, whichkept the heat from circulating and baking the top of the loaf. This is causedby too much yeast. Use about 1 4 lessyeast next time.Why is my bread raw in the center?This means that the bread didn’t risesufficiently because either there wasn’tenough yeast or there wasn’t enoughrising time. Try programming themachine for Manual or Dough then,when the machine is done, reset itback to START. This gives the doughtwo kneading cycles before baking.8Why didn’t my loaf rise?The yeast was either dead because ofan overdose of salt or sugar, or therewasn’t enough yeast for the amount offlour. Or you forgot to add yeast.Why did my bread rise up and overthe pan?Too much yeast was added to thedough.Why is my bread all holey?This is caused by too much yeast orliquid.Why is my dough too dry?Add liquid, a teaspoon at a time,until dough forms a ball while beingkneaded.Why is my dough wet and sticky?Add extra flour, a teaspoon at a time,until dough forms a ball while beingkneaded.
