HelpfulBREWING TIPSMeasureGrind SizePour coffee and water on a scalefor accurate measurement.Adjust the grind based on yourresults. If your grind size is toocoarse, the coffee could filter toofast resulting in weak flavor. Ifit is too fine, the coffee could bebecome over extracted and bitter.Brew RecipeOur recipes start with 1 partcoffee to 17 parts water. AEROPRESS(The Inverted Method)1Add 14g of ground coffee to the invertedAeroPress (see diagram). Set on a scale.2Press ‘tare’ on the scale.3Start your timer and pour a smallamount of hot water (195 -205 F)into the Aeropress to dampen thebed of grounds. Wait 30 seconds,allowing coffee to bloom.4Continue pouring hot water slowlyinto AeroPress until you reach 235g,or as much as fits.The inverted method: brew whileinverted (L), then flip and plunge (R)medium fine grindslightly finer than drip2 minutes5Gently stir the slurry (coffee andwater mixture) 2-3 times.to brew 8 oz.6Allow to steep until 2:00.14g coffee 235g water7Meanwhile, put the paper filter intothe small black filter cap and wet withhot water. Then carefully twist thefilter basket onto the top of invertedAeropress.8Flip the AeroPress back upright onto asturdy empty mug. Push down to plunge.9When finished, remove filter basket.Empty grounds and filter into a compostbin by pushing down on the plunger.2" paper disc filterstir paddle

CHEMEX1Fold filter and place into the topof the Chemex (see diagram below).2Pour a small amount of hot water throughthe empty filter. This reduces paper tasteand pre-heats the Chemex. Pour enough hot water(195 -205 F) to dampen the bed of grounds.Stir 3 times.36Wait 30-45 seconds,allowing coffee to bloom.7Starting in the center, pour waterconsistently in a circular motion to saturatethe bed of grounds. Pour enough water tomaintain the height of the slurry at about ½"below the lip of the Chemex. Avoid pouringdown the sides of the filter. Stop when youreach the total weight of water.8Stir gently 2-3 times.9Wait for coffee to drain (4-5 minutestotal if brewed correctly). CLEVER DRIPPER1Fold paper filter and put it into thedripper. Set the dripper on a large cup.2Pour a small amount of hot water throughthe empty filter. This reduces paper tasteand pre-heats the Clever and cup.3Prepare ground coffee.4Place Clever onto the scale (without thecup!) and add coffee grounds, shaking tolevel the bed.5Press ‘tare’ on the scale.6Start your timer and pour a small amountof hot water (195 -205 F) to dampen thebed of grounds. Wait 30 seconds, allowingcoffee to bloom.7Continue pouring water, making sure toevenly saturate the grounds. Stop whenyou reach the total weight of water.8Gently stir the slurry.9Place lid on the Clever.10At 2:30, stir the slurry gently 2-3 times.Empty your cup (if it still has hot water init) and place the Clever on top of your cupto drain.11Wait 1-1.5 minutes for coffee to drain,then place filter and grounds in compost.medium fine grindslightly finer than drip3-4 minutesto brew 10 oz.20g coffee 340g waterNo.4 paper filter

FRENCH PRESS1Fill empty french press with hot waterso that it pre-heats while you prepareground coffee.2Empty out the water and addappropriate amount of ground coffee.3Set on the scale and press ‘tare’.4Start your timer and pour a smallamount of hot water (195 -205 F)into the french press to dampenthe bed of grounds.5Wait 30 seconds, allowing coffee tobloom. Keep covered with plunger lidduring bloom to hold in heat.coarse grind5 minutesto brew 10 oz.6Continue pouring water over the groundsuntil the total weight of water is reached.7Gently stir the slurry, then place filterand plunger onto the french press andpush down just enough to saturateground coffee, about half an inchbelow the surface.to brew 16 oz.8At 3:30, remove lid and give slurry3 small stirs. Replace lid.55g coffee 935g water9At 5:00, push plunger down slowly,stopping and waiting if there isresistance.10Serve coffee and place groundsinto compost.20g coffee 340g water32g coffee 544g waterto brew 30 oz.
