What is Convection Microwave Cooking?The convection microwave oven is the ultimate cooking team.This state-of-the-art system brings together the best of bothworlds. What is Convection Cooking?With convection cooking, a high-speed fancirculates air past the heat source and aroundthe food. The superheated air browns andcrisps the food beautifully.Convection cooking is ideal for foodsrequiring 20 minutes or less cooking time.Preheating is necessary with convectioncooking. Convection Microwave UtensilsA wide variety of utensils may be used in convection andcombination cooking. Many of them are also suitable formicrowaving alone. Microwave-only paper and plastic products should not be used for combination cooking or placed inthe oven while it is still hot from convection cooking.A meat/poultry thermometer may help you to determinedoneness and assure you that foods have been cooked to asafe temperature. A conventional thermometer cannot beused with combination cooking, so it would be necessary tocheck doneness after food has been removed from the oven.Be sure to use hot pads when handling utensils. They becomehot from convection and combination cooking.The turntable is an utensil itself: a drip pan under the lowrack during roasting and broiling or a baking sheet for breadsand cookies.Low rack holds meat and poultry above the turntable so thatheated air cooks all sides of the food and the fat drains ontothe turntable for healthy cooking. Use the low rack for roasting, broiling, Convec Bake, Convec Broil and Convec Roast.6High rack serves as a shelf for two-level cooking, such aslayer cakes or cookies. Use it for convection and combinationcooking.

Metal and aluminum foil pans are safe for combination aswell as convection cooking. During convection, heat transferred from the pan cooks the bottom and sides of food.During the microwave part of the cycle, energy penetratesfrom the top.Oven glass is excellent for convection, combination andmicrowave cooking. Stoneware and pottery utensils may beused if they are also microwave-safe.Glass ceramic (Pyroceram ) casseroles go from oven totable. They are microwave-safe and resist the heat of surfaceelements as well as ovens.Thermoset plastics are heat-resistant to temperatures of425 F. as well as microwave-safe. They are sold as dual-purpose utensils and can be used. Do not use any other plasticsfor combination and convection cooking.7

Roasting TechniquesPreheating the oven is not necessary forroasted meat and poultry. Place foods onlow rack which holds meat out of its juices.You don’t even need a pan because the turntable will catch the drippings. For moist,tender, perfectly done meat in a fraction ofthe conventional time, just season meat andplace it in the oven and cook, following thetemperature and time in chart on page 11 oruse Convec Roast for whole chicken, wholeturkey, turkey breast or pork loin.Optional utensils are metal or foil roasting pans, oven-glassbaking dishes or Pyroceram casseroles.Shield thin or bony areas of roasts or breast, wing tips andlegs of birds to prevent overbrowning. Be sure foil does nottouch rack or oven walls.9

Roasting TechniquesTo collect drippings for preparing gravy, place amicrowave-safe dish below the low rack. Whenmeat or poultry is done, remove and allow tostand covered while microwaving gravy in thesame dish.Gravy211tablespoons fatcup cooking liquid or brothtablespoon all-purpose flourPour drippings into measuring cup. Allow fat torise to top; return 2 tablespoons to baking dish.Skim off remaining fat; discard. Add broth tomake 1 cup. Set aside.Blend flour into fat in baking dish. Microwaveat HIGH (100%) until lightly browned, about3 minutes. Stir in cooking liquid. Microwaveat HIGH (100%), stirring several times, untilthickened and smooth.Check doneness after minimum time using a meat thermometer. Removal temperatures are listed on page 11. If meat isnot done, cook 5 minutes longer and check again. Let stand,tented with foil, 5 to 10 minutes before carving.10Roast less-tender cuts of meat in heat-resistant and microwave oven-safe covered casserole or in oven cooking bag setin baking dish. Broiling TechniquesSpray low rack and turntable with nonstick vegetable cooking spray for easy cleanup. Do not cover low rack with aluminum foil, as it blocks the flow of warm air that cooks thefood.Check chart, opposite, for maximum broiling time. Programoven for maximum time, on BROIL or 450 F., followingdirections in use and care manual. Season and slash fatat 1-inch intervals. When audible signal sounds that ovenis preheated, quickly put food in oven. You may also useConvec Broil.Cook for the minimum time recommended in the chart; thentest for doneness. Time varies with the thickness or weight ofmeat and degree of desired doneness. Turning meat over is notnecessary, as moving air cooks it on both sides.Broil food in advance, if desired, then slice. Individualservings may be reheated as needed by microwaving atMEDIUM (50%), until warm.12
