The Sodium Content of Your FoodMary Kinney Bielamowicz*IntroductionSodium is a mineral element that the body needs to function properly. It is involved intransmitting nerve impulses and in maintaining blood volume and cellular osmotic pressure.The Dietary Reference Intakes for Sodium (Institute of Medicine, National Academiesof Science, 2005) established a Tolerable Upper Intake Level (UL), which is the highestdaily nutrient intake level that is likely to pose no risk of adverse health effects. As theUL increases, so does the risks of adverse effects. For sodium, the adult UL is 2,300 milligrams (mg). Intakes above this level are associated with increased blood pressure. It isestimated that most people take in an average of 2,300 to 6,900 milligrams (about 1 to 3teaspoons or 6 to 17 grams of salt) per day.Most dietary sodium is found in the form of sodium chloride, the compound we knowas table salt, which is 40 percent sodium and 60 percent chloride. One teaspoon of saltcontains about 2,000 milligrams of sodium.Many Americans consume more sodium than they need. Nutrition and Your Health—Dietary Guidelines for Americans, is published jointly by the U.S. Departments of Agriculture (USDA) and Health and Human Services (HHS). Dietary Guidelines for Americans, 2010 is based on the Report of the Dietary Guidelines Advisory Committee on theDietary Guidelines for Americans, and in consideration of federal agency and publiccomments. It suggests that people should “avoid [eating] too much sodium.”The new 2010 Dietary Guidelines for Americans focuses on balancing calories with physical activity, and encourages Americans to consume more healthy foods like vegetables,fruits, seafood, whole grains, and fat-free and low-fat dairy products, and to consume lesssodium, saturated and trans fats, added sugars, and refined grains.The guidelines also advise that people consume: Less than 2,300 milligrams (mg) of sodium per day 1,500 mg per day if they are 51 and older and at any age if they are African Americanor have hypertension, diabetes, or chronic kidney disease. The 1,500 mg recommendation applies to about half of the U.S. population, including children, and the majorityof adults (Dietary Guidelines for Americans, 2010).A healthy eating pattern limits intake of sodium, solid fats, added sugars, and refinedgrains and emphasizes nutrient-dense foods and beverages—vegetables, fruits, wholegrains, seafood, lean meats, poultry, eggs, beans, peas, nuts, seeds, and fat-free or low-fatmilk and milk products.*Regents Fellow, Professor and Extension Nutrition Specialist, The Texas A&M System1

A basic premise of the Dietary Guidelines is that people should meet their nutrient needsprimarily by consuming foods. In certain cases, fortified foods and dietary supplementsmay help provide one or more nutrients that otherwise might be consumed in less thanrecommended amounts.Two eating patterns that embody the Dietary Guidelines are the USDA Food Patterns andtheir vegetarian adaptations and the DASH (Dietary Approaches to Stop Hypertension)Eating Plan dash/new dash.pdf ).Excess sodium in the diet is believed to contribute to high blood pressure or hypertensionin some people. To help control high blood pressure, physicians often advise that patientscontrol their body weight and restrict sodium intake from foods, drinks, and drugs.Table 1 shows the sodium content of common foods to help you figure out how muchsodium is in your diet.In addition to the salt we knowingly sprinkle on our food, we eat many foods that containsodium as a part of their normal chemical composition. Household staples such as bakingpowder and baking soda are sodium compounds. Popular flavoring agents that are highin sodium include soy sauce, Worcestershire sauce, catsup, pickles, olives, and garlic,onion, and celery salts.Many processed foods contain added sodium. Salted or brined meats and fish are obviously higher in salt content than are the uncured forms. Many canned vegetables arepacked in a salt solution or brine.Frozen vegetables are usually processed without added salt. However, starchy vegetablessuch as lima beans and peas are often sorted in brine before freezing. Frozen vegetableswith added sauces, mushrooms, or nuts are higher in sodium that are plain varieties.Canned and frozen fruits are usually processed without added salt, but some companiesadd small amounts to prevent darkening of some fruits and to enhance the flavor ofapplesauce. Some canned and frozen fruits, and most canned whole tomatoes, are dippedin sodium hydroxide so they can be peeled easily. This process raises the sodium levelsin these foods. Canned and bottled citrus drinks are sometimes buffered with sodiumcitrate. Sodium ion exchange is used in processing some wines to reduce sediment andclarify them.Chemical ingredients that contain sodium may be added during food processing. Examples of such ingredients include monosodium glutamate or MSG (a flavor enhancer);sodium saccharin (a sweetener); sodium phosphates (emulsifiers, stabilizers, buffers);sodium citrate (a buffer); sodium caseinate (a thickener and binder); sodium benzoate andsodium nitrite (preservatives).It is especially important for people on salt-restricted diets to read ingredient labels carefully to see if any sodium compounds have been included in processed foods. The itemslisted first on the label are present in the largest amounts. Nutritional information onlabels of some foods, such as breakfast cereals, shows sodium values. To allow for variability among packages, cereal manufacturers many show higher values on packages ofcereal than those shown in Table 1.Some over-the-counter drugs, particularly antacids, contain significant amounts of sodium.Read the labels carefully, and ask your physician about using such drugs. Refer to Table 2 fora list of selected nonprescription drugs and the amount of sodium each contains.2

Many people with high blood pressure take diuretics and are advised to increase theirpotassium intake to replenish the potassium that is lost in the increased urine volume.Bananas and orange juice are often recommended for their potassium content. Mostfresh vegetables, fruits, legumes, and uncured meats are also good sources of potassiumand add only small amount of sodium to the diet. Consult your physician before using apotassium substitute for common salt.Another source of sodium is drinking water. The sodium content of drinking water variesconsiderably throughout the country. This variation also affects the sodium content ofsoft drinks and beer produced and bottled at different locations.Water softeners raise the sodium content of water—the harder the water, the moresodium needed to soften it. In most states, the state department of public health can supply information on the sodium content of public water supplies and help get water fromindividual wells or other supplies analyzed.The information in this publication was obtained from published reports of laboratoryanalyses that used flame photometry, atomic absorption, or emission spectroscopy to findthe sodium content of foods. These reports include data from industrial, scientific, andtechnical literature.Because some products vary considerably in sodium content, Table 1 shows representative values. Sodium values show reflect current processing practices and typical productformulas. If these practices and formulas are changed, the sodium values may changealso.Values given in Table 1 are for unsalted products, unless specified. Cooked items havebeen prepared using unsalted water, even though the manufacturers’ instructions maycall for salt. Canned vegetable values are for the total can contents, including solidsand liquids. The values reported are for common household measures of the foods andinclude metric equivalents.Some labels may express sodium content in grams or milligrams.
